Lebanese Layered Fruit Smoothie

This classic Lebanese drink is so popular and for good reason. It’s a refreshing and delicious drink that is packed with a variety of fruits.

I recreated this Lebanese layered fruit cocktail by pureeing three fruits: mango, avocado, and strawberry separately. The flavour combination of these three layers creates the perfect balance; The sweetness from the mangos pairs perfectly with the slightly tart strawberries and creamy avocado…Delicious!


Ingredients

Avocado puree
  • 1/4 avocado
  • 1/4 cup spinach frozen
  • 1 cup pineapple frozen
  • 1/4 cup water
  • 1/4 cup milk
  • 1 tbsp lemon juice
Mango puree
  • 1 cup mango cubed and frozen
  • 1/2 cup pineapple frozen
  • 1/4 cup water
  • 1/2 cup milk
Strawberry puree
  • 2 cups strawberries sliced and frozen
  • 1 banana frozen
  • 1/2 cup water
  • 1/4 cup milk




Description

For avocado puree
  1. In a blender, purée all ingredients to get a creamy runny final product. If too thick, add a splash of water or milk. Set aside for assembly.


For mango puree
  1. Blend together to get a creamy runny final product. If too thick, adjust consistency with water or milk. Set aside for assembly.


For strawberry puree
  1. Purée in a blender. If too thick, adjust consistency with water or milk. Set aside for assembly.


Assembly
  1. Layer strawberry purée, mango purée, and then avocado purée


  2. Top with chopped fruit. Include any mix of the following: strawberries, banana, mango, raspberries, pomegranate, apple, pear.
